Description
A vibrant, refreshing salad combining sweet strawberries, crisp spinach, creamy feta, and crunchy walnuts with a honey balsamic poppy seed dressing.
Ingredients
- 8 cups fresh baby spinach
- 2 cups sliced strawberries
- 1/2 cup crumbled feta cheese
- 1/3 cup toasted walnuts, chopped
- 1/4 red onion, thinly sliced
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/2 tsp poppy seeds
- Salt and pepper to taste
Instructions
- Toast walnuts in dry skillet for 3-4 minutes; cool and chop
- Soak sliced onion in cold water for 10 minutes
- Whisk together dressing ingredients
- Combine spinach, strawberries, and drained onion in large bowl
- Toss with half the dressing
- Top with feta and walnuts; serve immediately
Notes
Always dress the salad just before serving to prevent wilting. Use block feta cheese for best texture and flavor.
