A fresh, vibrant peach mozzarella salad that perfectly captures summer flavors in every bite.


Ingredients

  • 4 ripe peaches, sliced
  • 5 cups fresh spinach, chopped
  • 8 oz fresh mozzarella, cubed
  • 1 large avocado, diced
  • 1/2 cup toasted walnuts, chopped
  • 2 cups cooked chicken breast, sliced (optional)
  • 1/4 cup balsamic vinegar
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  • Arrange chopped spinach on serving plates or in a large bowl.
  • Top with sliced peaches, cubed mozzarella, diced avocado, and chicken if using.
  • Sprinkle toasted walnuts over the salad.
  • Whisk together vinaigrette ingredients in a small bowl or shake in a jar.
