Description
A fresh, flavorful salad combining crisp apples, candied walnuts, and tangy blue cheese.
Ingredients
- 6 ounces mixed baby greens
- 1 large Honeycrisp apple, thinly sliced
- 1 cup raw walnuts
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 4 ounces crumbled blue cheese
- 1/4 cup dried cranberries
- 1/4 cup thinly sliced red onion
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Heat butter in a skillet over medium-low heat. Add walnuts and brown sugar, stirring constantly for 3-4 minutes until golden. Cool completely.
- Combine olive oil, vinegar, maple syrup, mustard, salt, and pepper in a jar. Shake well.
- Place greens in a large bowl. Top with apple slices, candied walnuts, blue cheese, cranberries, and onion.
- Drizzle with dressing and toss gently before serving.
Notes
- Slice apples just before serving to prevent browning
- Candied walnuts can be made 3 days ahead
- Substitute feta cheese for milder flavor
