Description
Fluffy yeasted donuts packed with tender cinnamon apples and finished with a sweet vanilla glaze.
Ingredients
For the Fritter Dough:
- 1 cup whole milk, warmed to 125°F
- 2¼ teaspoons active dry yeast
- ½ cup granulated sugar, divided
- ⅓ cup unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon fine sea salt
- 3¾ cups all-purpose flour
- 2½ teaspoons ground cinnamon, divided
- 3 large Honeycrisp apples, peeled and diced
For Frying:
- 7–8 cups vegetable oil
For the Glaze:
- 3¾ cups powdered sugar
- 2 teaspoons pure vanilla extract
- 6–7 tablespoons whole milk
Instructions
- Combine warm milk with 2 tablespoons sugar and yeast. Let foam for 8-10 minutes.
- Add remaining sugar, melted butter, eggs, vanilla, and salt. Whisk until smooth.
- Gradually mix in flour and 1½ teaspoons cinnamon until dough forms.
- Fold in diced apples and remaining cinnamon.
- Cover and rise in warm place for 1 hour 15 minutes until doubled.
- Shape into 10 portions on parchment squares.
- Rise again for 35-40 minutes until puffy.
- Heat oil to 305°F. Prepare glaze by whisking all ingredients until smooth.
- Fry fritters 2-3 at a time for 7-9 minutes until golden brown.
- Glaze while warm and cool on wire rack.
Notes
Keep oil temperature steady at 305°F for even cooking. Press apple pieces firmly into dough to prevent separation during frying.
