Description

A colorful, healthy stir fry featuring tender chicken and crisp vegetables in a savory sauce that’s ready in just 25 minutes.


Ingredients

  • 1 lb boneless chicken breast, cubed
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp vegetable oil, divided
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  • Whisk together sauce ingredients and set aside
  • Cook seasoned chicken in 2 tbsp oil until golden, remove
  • Stir fry vegetables in remaining oil until crisp-tender
  • Add garlic and ginger, cook 1 minute
  • Return chicken to pan, add sauce, stir until thickened
  • Serve immediately over rice

Notes

Keep heat high for best results. Prep all ingredients before cooking. Don’t overcook vegetables to maintain crispness.
