A colorful, healthy stir fry featuring tender chicken and crisp vegetables in a savory sauce that’s ready in just 25 minutes.
Ingredients
- 1 lb boneless chicken breast, cubed
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp vegetable oil, divided
- 3 tbsp low-sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp honey
- 1 tsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Whisk together sauce ingredients and set aside
- Cook seasoned chicken in 2 tbsp oil until golden, remove
- Stir fry vegetables in remaining oil until crisp-tender
- Add garlic and ginger, cook 1 minute
- Return chicken to pan, add sauce, stir until thickened
- Serve immediately over rice
Notes
Keep heat high for best results. Prep all ingredients before cooking. Don’t overcook vegetables to maintain crispness.
