Description
Golden, crispy peach fritters with tender cake-like centers, bursting with sweet peach flavor and topped with a luscious peach glaze.
Ingredients
- 1 cup all-purpose flour
- 1 tbsp granulated sugar
- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp ginger
- ¼ tsp kosher salt
- Pinch of nutmeg
- ¼ cup heavy cream
- 3 oz vanilla yogurt
- 1 large egg
- 1 can diced peaches, drained (juice reserved)
- Oil for frying
- 1¼ cups powdered sugar
- ¼ tsp vanilla
- 3–5 tsp peach juice
Instructions
- Mix dry ingredients in a bowl
- Combine wet ingredients separately
- Fold wet into dry ingredients until just combined
- Gently fold in peaches
- Heat oil to 375°F
- Fry ¼ cup portions for 2-3 minutes per side until golden
- Drain on paper towels, then transfer to wire rack
- Whisk glaze ingredients until smooth
- Drizzle glaze over warm fritters
Notes
Maintain oil temperature at 375°F for best results. Don’t overmix batter. Serve warm for optimal enjoyment. Store leftovers covered and reheat in 350°F oven for 5-8 minutes.
