Description

Golden, crispy peach fritters with tender cake-like centers, bursting with sweet peach flavor and topped with a luscious peach glaze.


Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp kosher salt
  • Pinch of nutmeg
  • ¼ cup heavy cream
  • 3 oz vanilla yogurt
  • 1 large egg
  • 1 can diced peaches, drained (juice reserved)
  • Oil for frying
  • 1¼ cups powdered sugar
  • ¼ tsp vanilla
  • 35 tsp peach juice

Instructions

  • Mix dry ingredients in a bowl
  • Combine wet ingredients separately
  • Fold wet into dry ingredients until just combined
  • Gently fold in peaches
  • Heat oil to 375°F
  • Fry ¼ cup portions for 2-3 minutes per side until golden
  • Drain on paper towels, then transfer to wire rack
  • Whisk glaze ingredients until smooth
  • Drizzle glaze over warm fritters

Notes

Maintain oil temperature at 375°F for best results. Don’t overmix batter. Serve warm for optimal enjoyment. Store leftovers covered and reheat in 350°F oven for 5-8 minutes.
