Description

Strawberry Rice Pudding – A creamy, comforting dessert featuring tender rice pudding topped with honey-roasted strawberries.


Ingredients

  • 1 pound fresh strawberries, hulled and quartered
  • 3 tablespoons honey
  • 1 cup long-grain white rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon kosher salt
  • 1 teaspoon pure vanilla extract
  • Whipped cream for serving

Instructions

  • Preheat oven to 300°F (150°C). Toss strawberries with honey in a baking dish.
  • Roast strawberries for 1 hour 30 minutes until deep red and syrupy.
  • Rinse rice until water runs clear. Combine rice, milk, sugar, and salt in saucepan.
  • Bring to boil, then simmer on medium-low for 20 minutes, stirring frequently.
  • Stir in vanilla and cardamom when rice is tender and creamy.
  • Serve warm or chilled, topped with whipped cream and roasted strawberries.

Notes

  • Stir frequently to prevent sticking
  • Add more milk if pudding becomes too thick
  • Roasted strawberries can be made up to a week ahead
