Strawberry Rice Pudding – A creamy, comforting dessert featuring tender rice pudding topped with honey-roasted strawberries.
Ingredients
- 1 pound fresh strawberries, hulled and quartered
- 3 tablespoons honey
- 1 cup long-grain white rice
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon kosher salt
- 1 teaspoon pure vanilla extract
- Whipped cream for serving
Instructions
- Preheat oven to 300°F (150°C). Toss strawberries with honey in a baking dish.
- Roast strawberries for 1 hour 30 minutes until deep red and syrupy.
- Rinse rice until water runs clear. Combine rice, milk, sugar, and salt in saucepan.
- Bring to boil, then simmer on medium-low for 20 minutes, stirring frequently.
- Stir in vanilla and cardamom when rice is tender and creamy.
- Serve warm or chilled, topped with whipped cream and roasted strawberries.
Notes
- Stir frequently to prevent sticking
- Add more milk if pudding becomes too thick
- Roasted strawberries can be made up to a week ahead
