Description
One-pan chicken fajitas with tender seasoned chicken, colorful bell peppers, and onions roasted together for an easy, flavorful weeknight dinner.
Ingredients
- 1½ lbs boneless chicken breasts, sliced into strips
- 3 bell peppers, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 3 tbsp oil
- 1 lime
- ¼ cup fresh cilantro
- 8–10 flour tortillas
- Fajita Seasoning: 1 tbsp chili powder, 1½ tsp paprika, 1½ tsp cumin, ½ tsp each onion powder and garlic powder, ¼ tsp oregano, ¼ tsp cayenne, salt and pepper
Instructions
- Preheat oven to 425°F and grease a large sheet pan
- Arrange sliced vegetables on pan, top with chicken strips
- Mix all seasoning ingredients together
- Season chicken and vegetables, add garlic and oil
- Toss everything together and spread evenly
- Bake 15-20 minutes until chicken reaches 165°F
- Warm tortillas in oven during last 5 minutes
- Finish with lime juice and cilantro, serve immediately
Notes
- Slice chicken against the grain for tenderness
- Don’t overcrowd the pan for best results
- Can be prepped ahead and stored in refrigerator
