Easy Sheet Pan Chicken Fajitas

Description

One-pan chicken fajitas with tender seasoned chicken, colorful bell peppers, and onions roasted together for an easy, flavorful weeknight dinner.


Ingredients

  • lbs boneless chicken breasts, sliced into strips
  • 3 bell peppers, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 3 tbsp oil
  • 1 lime
  • ¼ cup fresh cilantro
  • 810 flour tortillas
  • Fajita Seasoning: 1 tbsp chili powder, 1½ tsp paprika, 1½ tsp cumin, ½ tsp each onion powder and garlic powder, ¼ tsp oregano, ¼ tsp cayenne, salt and pepper

Instructions

  • Preheat oven to 425°F and grease a large sheet pan
  • Arrange sliced vegetables on pan, top with chicken strips
  • Mix all seasoning ingredients together
  • Season chicken and vegetables, add garlic and oil
  • Toss everything together and spread evenly
  • Bake 15-20 minutes until chicken reaches 165°F
  • Warm tortillas in oven during last 5 minutes
  • Finish with lime juice and cilantro, serve immediately

Notes

  • Slice chicken against the grain for tenderness
  • Don’t overcrowd the pan for best results
  • Can be prepped ahead and stored in refrigerator
  • Freezer-friendly for up to 3 months
