Easy Roasted Cauliflower

Description

Golden, caramelized roasted cauliflower with garlic and fresh lemon – the perfect vegetable side dish for any meal.


Ingredients

  • 1 large head cauliflower, cut into bite-sized florets (about 9 cups)
  • 3 tablespoons olive oil
  • 2 teaspoons sweet paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 large garlic cloves, finely minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F and line a large rimmed baking sheet with parchment paper.
  2. Cut cauliflower into uniform 1.5-inch florets and place on prepared baking sheet.
  3. Drizzle with olive oil and toss to coat evenly using your hands.
  4. Sprinkle paprika, salt, and pepper over cauliflower and toss again.
  5. Spread florets in a single layer with space between each piece.
  6. Roast for 20 minutes until edges begin to turn golden brown.
  7. Sprinkle minced garlic over cauliflower and return to oven for 5 more minutes.
  8. Remove from oven and immediately drizzle with lemon juice and sprinkle with fresh parsley.
  9. Serve hot while the edges are still crispy.

Notes

Don’t overcrowd the pan – use two baking sheets if needed for proper caramelization. Add garlic only in the final minutes to prevent burning.
