Ingredients
For the Whipped Ricotta:
- 1 cup whole milk ricotta cheese
- 2 tablespoons heavy cream
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- Pinch of sea salt
For the Toast:
- 2 large ripe peaches, sliced
- 4 thick slices artisan bread
- 2 tablespoons butter
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon
- 1/4 cup chopped toasted nuts
- Fresh mint leaves
- Honey for drizzling
Instructions
- Make the whipped ricotta: Beat ricotta, cream, honey, vanilla, and salt until light and fluffy, about 2-3 minutes.
- Caramelize the peaches: In a large skillet over medium heat, melt butter. Add peach slices, brown sugar, and cinnamon. Cook 4-5 minutes, stirring gently, until golden and caramelized.
- Toast the bread: Toast bread slices until golden brown and crispy.
- Assemble: Spread whipped ricotta generously on each toast slice. Top with caramelized peaches, nuts, and mint. Drizzle with honey and serve immediately.
Notes
- Use ripe but firm peaches for best results
- Whipped ricotta can be made up to 3 days ahead
