Ingredients

For the Whipped Ricotta:

  • 1 cup whole milk ricotta cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

For the Toast:

  • 2 large ripe peaches, sliced
  • 4 thick slices artisan bread
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup chopped toasted nuts
  • Fresh mint leaves
  • Honey for drizzling

Instructions

  • Make the whipped ricotta: Beat ricotta, cream, honey, vanilla, and salt until light and fluffy, about 2-3 minutes.
  • Caramelize the peaches: In a large skillet over medium heat, melt butter. Add peach slices, brown sugar, and cinnamon. Cook 4-5 minutes, stirring gently, until golden and caramelized.
  • Toast the bread: Toast bread slices until golden brown and crispy.
  • Assemble: Spread whipped ricotta generously on each toast slice. Top with caramelized peaches, nuts, and mint. Drizzle with honey and serve immediately.

Notes
