Description

Peach Butter Swim Biscuits Tender, buttery biscuits filled with sweet peaches and baked in a cinnamon butter base.


Ingredients

Biscuits:

  • 2½ cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 can (15 oz) peaches in juice, drained and chopped
  • 2 cups buttermilk

Butter Base:

  • ½ cup unsalted butter
  • ¼ cup packed brown sugar
  • ¼ teaspoon ground cinnamon

Topping:

  • 2 tablespoons granulated sugar
  • ¼ teaspoon ground cinnamon

Instructions

  • Preheat oven to 450°F.
  • In medium bowl, whisk together flour, baking powder, granulated sugar, cinnamon, and salt.
  • Add buttermilk and stir until just combined (lumps are okay).
  • Gently fold in drained, chopped peaches.
  • In small bowl, combine melted butter, brown sugar, and cinnamon. Pour into 8×8-inch baking dish.
  • Spoon biscuit dough over butter mixture and spread to edges.
  • Mix topping ingredients and sprinkle half over dough.
  • Score dough into 9 squares. Bake 30-35 minutes until golden brown.
  • Sprinkle remaining cinnamon sugar on hot biscuits before serving.

Notes

  • Drain peaches thoroughly to prevent soggy biscuits
  • Don’t overmix the dough for tender results
  • Can substitute fresh or frozen peaches (pat dry first)
  • Store covered at room temperature for 2 days
