Dreamy Roasted Grape Ricotta Toast – A perfect blend of sweet roasted grapes, creamy ricotta, and crunchy almonds on toasted bread.
Ingredients
- 3 cups fresh grapes (red and green mix)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 cup whole milk ricotta cheese
- 1 crusty baguette
- Honey to taste
- 3 tablespoons sliced almonds
Instructions
- Preheat oven to 425°F.
- Wash and thoroughly dry grapes. Toss with olive oil and salt in a large bowl.
- Spread grapes on a parchment-lined baking sheet. Roast for 20-25 minutes, shaking pan halfway through.
- Slice baguette into 3/4-inch thick pieces and toast until golden brown.
- Spread ricotta generously on each toast slice.
- Top with warm roasted grapes, sprinkle with almonds, and drizzle with honey.
Notes
Make sure grapes are completely dry before roasting to prevent steaming. Roasted grapes can be made up to 4 days ahead and stored in the refrigerator.
