A warming, comforting creamy cinnamon apple rice pudding that combines tender rice, sweet apples, and aromatic cinnamon into the perfect cozy dessert.
Ingredients
- ¾ cup short-grain white rice
- 2 cups whole milk
- ¾ cup water
- 2 medium Honeycrisp apples, peeled and diced
- 3 tablespoons brown sugar
- 1½ teaspoons ground cinnamon
- ¼ teaspoon vanilla extract
- 2 tablespoons butter
- ⅛ teaspoon salt
- 2 tablespoons maple syrup
Instructions
- Peel and dice apples, reserving a few thin slices for garnish.
- In a heavy-bottomed saucepan, combine rice, milk, water, and salt. Bring to a gentle boil over medium heat.
- Reduce heat to low and simmer for 20-25 minutes, stirring frequently.
- Add diced apples, brown sugar, cinnamon, and vanilla. Cook for 8-10 minutes more until apples are tender.
- Remove from heat and stir in butter until melted.
- Serve warm in bowls, garnished with apple slices and a drizzle of maple syrup.
Notes
- Stir frequently to prevent sticking
- Add extra milk if pudding becomes too thick
