A creamy, refreshing Crab Pasta Salad perfect for summer gatherings and potluck dinners
Ingredients
- 1 pound medium shell pasta
- 12 ounces imitation crab meat, flaked
- 1/2 cup frozen peas, thawed
- 1/2 cup red onion, finely diced
- 1/2 cup celery, chopped
- 1/2 cup red bell pepper, diced
- 3/4 cup mayonnaise
- 2 tablespoons fresh dill, chopped
- Salt and freshly ground black pepper to taste
- Fresh chives for garnish
Instructions
- Cook pasta in salted boiling water according to package directions until al dente. Drain and rinse with cold water.
- In a large bowl, gently combine pasta, crab meat, peas, onion, celery, and bell pepper.
- Add mayonnaise and dill, folding gently to coat everything evenly.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 1 hour before serving.
- Garnish with fresh chives before serving.
Notes
- The salad tastes even better the next day as flavors develop
- Can be stored in refrigerator for up to 3 days
- For best texture, don’t skip the chilling time
