Description

A creamy, refreshing Crab Pasta Salad perfect for summer gatherings and potluck dinners


Ingredients

  • 1 pound medium shell pasta
  • 12 ounces imitation crab meat, flaked
  • 1/2 cup frozen peas, thawed
  • 1/2 cup red onion, finely diced
  • 1/2 cup celery, chopped
  • 1/2 cup red bell pepper, diced
  • 3/4 cup mayonnaise
  • 2 tablespoons fresh dill, chopped
  • Salt and freshly ground black pepper to taste
  • Fresh chives for garnish

Instructions

  • Cook pasta in salted boiling water according to package directions until al dente. Drain and rinse with cold water.
  • In a large bowl, gently combine pasta, crab meat, peas, onion, celery, and bell pepper.
  • Add mayonnaise and dill, folding gently to coat everything evenly.
  • Season with salt and pepper to taste.
  • Cover and refrigerate for at least 1 hour before serving.
  • Garnish with fresh chives before serving.

Notes

  • The salad tastes even better the next day as flavors develop
  • Can be stored in refrigerator for up to 3 days
