Strawberry Cheesecake Cookies Decadent graham cracker cookies filled with cream cheese and strawberry jam


Ingredients

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tablespoon sour cream
  • ½ teaspoon vanilla extract
  • ⅓ cup strawberry jam

For the Cookie Dough:

  • 1 cup unsalted butter, room temperature
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2½ cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 4 oz white chocolate, chopped (optional)

Instructions

  • Make cream cheese filling, scoop into portions, and freeze for 30 minutes.
  • Prepare cookie dough and chill for 30 minutes.
  • Place jam and frozen cream cheese between layers of dough, seal edges completely.
  • Top with white chocolate pieces if using.
  • Freeze assembled cookies for 10 minutes, then bake at 375°F for 13-15 minutes.
  • Cool completely on baking sheets before serving.

Notes

Keep cream cheese dollops frozen until ready to use. Store cookies in the refrigerator but serve at room temperature for best flavor.
