Strawberry Cheesecake Cookies Decadent graham cracker cookies filled with cream cheese and strawberry jam
Ingredients
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 tablespoon sour cream
- ½ teaspoon vanilla extract
- ⅓ cup strawberry jam
For the Cookie Dough:
- 1 cup unsalted butter, room temperature
- ¾ cup granulated sugar
- ¾ cup light brown sugar, packed
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2½ cups all-purpose flour
- 1 cup graham cracker crumbs
- 2 tablespoons cornstarch
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 4 oz white chocolate, chopped (optional)
Instructions
- Make cream cheese filling, scoop into portions, and freeze for 30 minutes.
- Prepare cookie dough and chill for 30 minutes.
- Place jam and frozen cream cheese between layers of dough, seal edges completely.
- Top with white chocolate pieces if using.
- Freeze assembled cookies for 10 minutes, then bake at 375°F for 13-15 minutes.
- Cool completely on baking sheets before serving.
Notes
Keep cream cheese dollops frozen until ready to use. Store cookies in the refrigerator but serve at room temperature for best flavor.
