White Lasagna Soup

Description

A creamy, comforting one-pot soup that tastes just like white chicken lasagna. Packed with tender chicken, spinach, and a rich cheese blend, it is perfect for easy weeknight dinners.


Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 1/2 cup whole milk ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and sauté for 5 minutes until soft. Add the garlic and cook for 1 minute until fragrant.
  2. Stir in the Italian seasoning, thyme, salt, and pepper. Pour in the chicken broth and bring the mixture to a boil.
  3. Add the broken lasagna noodles to the boiling broth. Reduce heat to a simmer and cook for 10-12 minutes, stirring occasionally, until pasta is tender.
  4. Reduce heat to low. Stir in the shredded chicken and heavy cream. Simmer gently for 2-3 minutes to warm through.
  5. Turn off the heat. Stir in the fresh spinach, ricotta, and parmesan cheese until the spinach is wilted and the cheese is melted.
  6. Ladle into bowls and top with shredded mozzarella cheese before serving.

Notes

If you anticipate leftovers, consider cooking the noodles separately and adding them to individual bowls, as they will absorb liquid while sitting in the fridge.
