Ingredients
- 1 tsp pure vanilla extract
- 3 tbsp colored sprinkles (optional)
- 6 cups (170 g) Rice Krispies cereal
- 15 oz (425 g) miniature marshmallows (divided)
- 6 tbsp (85 g) salted butter (European style recommended)
Instructions
- Prepare a 13×9 inch baking pan by lining it with parchment paper or lightly greasing it with butter.
- Melt the salted butter in a large saucepan over medium-low heat, stirring occasionally.
- Add 10 ounces (about 5.5 cups) of the mini marshmallows to the melted butter. Stir constantly over low heat until completely smooth and melted.
- Remove the saucepan from the heat. Stir in the vanilla extract.
- Add the Rice Krispies cereal and the remaining 5 ounces of marshmallows. Fold gently until the cereal is evenly coated and the extra marshmallows soften slightly.
- Transfer the mixture to the prepared pan. Gently press it into an even layer using a silicone spatula or greased hands; do not pack tightly.
- Top with sprinkles if desired. Allow the treats to cool at room temperature for 45-60 minutes before slicing.
Notes
Using fresh marshmallows is key for the best texture. Avoid high heat to keep the treats soft.
