Description
A warming and savory chicken noodle soup featuring ginger, bok choy, and long noodles to celebrate new beginnings.
Ingredients
- 2 tbsp vegetable oil
- 1 lb boneless skinless chicken thighs, sliced
- 8 oz shiitake mushrooms, sliced
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 6 cups chicken broth
- 3 tbsp soy sauce
- 2 heads baby bok choy, quartered
- 1 tsp sesame oil
- 10 oz dried wheat noodles or egg noodles
- 2 green onions, sliced
Instructions
- Heat vegetable oil in a large pot over medium-high heat. Add chicken slices and sear until golden brown, about 5 minutes.
- Add garlic, ginger, and mushrooms to the pot. Sauté for 2-3 minutes until fragrant and mushrooms soften.
- Pour in chicken broth and soy sauce. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Meanwhile, boil noodles in a separate pot according to package instructions. Drain and rinse with cold water.
- Add bok choy to the soup and simmer for 3 more minutes until wilted.
- Stir in sesame oil. Divide noodles into bowls and ladle the hot soup and chicken over the top. Garnish with green onions.
Notes
For a vegetarian version, substitute chicken with tofu and use vegetable broth. Gluten-free tamari can be used in place of soy sauce.
