New Year Noodle Soup

Description

A warming and savory chicken noodle soup featuring ginger, bok choy, and long noodles to celebrate new beginnings.


Ingredients

  • 2 tbsp vegetable oil
  • 1 lb boneless skinless chicken thighs, sliced
  • 8 oz shiitake mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 6 cups chicken broth
  • 3 tbsp soy sauce
  • 2 heads baby bok choy, quartered
  • 1 tsp sesame oil
  • 10 oz dried wheat noodles or egg noodles
  • 2 green onions, sliced

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add chicken slices and sear until golden brown, about 5 minutes.
  2. Add garlic, ginger, and mushrooms to the pot. Sauté for 2-3 minutes until fragrant and mushrooms soften.
  3. Pour in chicken broth and soy sauce. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Meanwhile, boil noodles in a separate pot according to package instructions. Drain and rinse with cold water.
  5. Add bok choy to the soup and simmer for 3 more minutes until wilted.
  6. Stir in sesame oil. Divide noodles into bowls and ladle the hot soup and chicken over the top. Garnish with green onions.

Notes

For a vegetarian version, substitute chicken with tofu and use vegetable broth. Gluten-free tamari can be used in place of soy sauce.
