Description

A comforting and hearty lentil soup made with green lentils, fresh vegetables, and savory spices. This easy homemade recipe is perfect for a healthy weeknight dinner.


Ingredients

  • 2 stalks celery, diced
  • 1 1/2 cups green lentils, rinsed well
  • 1 yellow onion, diced
  • 2 tablespoons extra virgin olive oil
  • 6 cups vegetable broth, low sodium
  • 1 teaspoon dried thyme
  • 2 large carrots, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 lemon, juiced
  • Fresh parsley, chopped for garnish

Instructions

  1. Start by heating the olive oil in a large Dutch oven or heavy pot over medium heat to prevent burning. Add the diced onion, carrots, and celery, stirring them occasionally for about five to seven minutes until the onions become translucent and the vegetables start to soften.
  2. Stir in the minced garlic and sauté for another two minutes until the aroma fills your kitchen. Add the ground cumin, dried thyme, salt, and black pepper, stirring constantly to coat the vegetables in the spices and toast them slightly for deeper flavor.
  3. Pour the rinsed green lentils and the vegetable broth into the pot and stir everything to combine. Increase the heat to bring the mixture to a rolling boil, then immediately reduce the heat to low and place the lid on the pot.
  4. Let the soup simmer gently for roughly 30 to 35 minutes until the lentils are tender but still have a slight bite. Turn off the heat completely and stir in the fresh lemon juice before serving warm with a garnish of chopped parsley.

Notes

For a thicker soup, pulse an immersion blender through the pot 2-3 times before serving. Leftovers store well in the refrigerator for up to 5 days.
