Description
A refreshing frozen dessert blending vanilla ice cream, creme fraiche, and bright citrus juices. This easy make-ahead treat requires no baking and is perfect for dinner parties.
Ingredients
- 190ml crème fraîche
- 1 grapefruit (zested and 1/2 juiced)
- Shredded candied orange zest for garnish
- 310g lemon curd
- 890ml quality vanilla ice cream, softened
- Shortbread biscuits for serving
- 2 clementines (zested and juiced)
Instructions
- Place the softened vanilla ice cream into a large bowl and add the crème fraîche, clementine zest, clementine juice, grapefruit zest, grapefruit juice, and lemon curd. Whisk vigorously until the mixture is fully combined and smooth.
- Divide the mixture evenly between 8 small serving glasses or ramekins. Place in the freezer for a minimum of 5 hours until set, covering with plastic wrap once solid if storing longer.
- Remove the possets from the freezer 25 to 30 minutes before serving to allow them to soften slightly. Top with candied orange zest and serve with shortbread cookies.
Notes
Ensure the ice cream is soft enough to mix but not completely melted liquid. You can substitute satsumas if clementines are unavailable.
