Creamy Roasted Garlic Soup

Description

A velvety, restorative soup made with sweet roasted garlic, potatoes, and fresh herbs. Perfect for cold evenings.


Ingredients

  • 2 tablespoons olive oil
  • 26 cloves fresh garlic, peeled
  • 2 tablespoons unsalted butter
  • 2 cups russet potatoes, peeled and chopped
  • 1 large yellow onion, chopped
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

  1. Heat the butter and olive oil in a large pot over medium-low heat. Add the onion and garlic cloves. Cook slowly for 20-25 minutes, stirring often, until soft and golden but not browned.
  2. Add the chopped potatoes and thyme to the pot. Pour in the broth and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 20 minutes until potatoes are very tender.
  4. Remove thyme stems if used. Blend the soup until smooth using an immersion blender.
  5. Stir in the heavy cream and warm through. Remove from heat and stir in lemon juice.
  6. Season generously with salt and pepper before serving.

Notes

For a dairy-free version, substitute the butter with oil and use coconut milk or cashew cream instead of heavy cream.
