Ingredients
- 1 1/2 lbs boneless skinless chicken breast, cut into 1 1/2-inch pieces
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 1 1/2 cups panko breadcrumbs
- 2 tbsp olive oil
- 1/4 tsp paprika
- 3/4 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
- Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for crisping.
- Mix the panko breadcrumbs with olive oil in a bowl, then spread them on a baking sheet. Bake for 4-5 minutes until golden brown, stirring halfway through.
- Transfer the toasted crumbs to a bowl and mix in the garlic powder, onion powder, salt, and paprika.
- Prepare a baking sheet by placing a wire rack on top and spraying it with non-stick cooking spray.
- Set up three bowls: one with flour, one with beaten eggs, and one with the seasoned panko mixture.
- Dredge each chicken piece in flour, dip into the egg, and then press firmly into the breadcrumbs to coat.
- Arrange the nuggets on the wire rack and bake for 12-16 minutes until the chicken is cooked through and the coating is crispy.
Notes
Pounding the chicken to an even thickness helps ensure uniform cooking. Leftovers can be reheated in the oven or air fryer to restore crispiness.
