Description

Classic Caesar Salad with Garlic Croutons featuring homemade garlic croutons and creamy Caesar dressing made with anchovy paste for authentic flavor.


Ingredients

Caesar Dressing:

  • 1 cup mayonnaise
  • 1 cup sour cream
  • ¼ cup red wine vinegar
  • 1½ teaspoons Worcestershire sauce
  • 1 teaspoon anchovy paste
  • 1 large garlic clove, minced
  • ¼ cup freshly grated Parmesan cheese
  • ½ teaspoon freshly cracked black pepper
  • 23 dashes hot sauce

Garlic Croutons:

  • 4 cups day-old bread, cubed
  • ½ cup extra virgin olive oil
  • 3 garlic cloves, thinly sliced
  • 2 tablespoons fresh Italian parsley, chopped
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Salad:

  • 8 cups romaine lettuce hearts, chopped
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup Parmesan ribbons
  • Salt and pepper to taste

Instructions

  • Make dressing: Combine all dressing ingredients in a jar and shake well, or whisk in a bowl until smooth.
  • Prepare croutons: Preheat oven to 375°F. Heat oil and garlic in saucepan until garlic is golden, 4-5 minutes. Strain garlic and toss bread cubes with infused oil.
  • Bake croutons: Spread on baking sheet and bake 10-12 minutes until golden, tossing once. Remove and toss with parsley, salt, and pepper.
  • Assemble salad: Toss romaine with ⅓ cup dressing. Add half the Parmesan and 1 cup croutons, toss again. Top with remaining cheese and croutons.

Notes

  • Make dressing up to 1 week ahead
  • Store croutons in airtight container up to 2 weeks
  • Don’t dress lettuce until ready to serve to prevent wilting
  • Prep Time: 20 minutes
  • Cook Time: 15 minutes
