Caprese Pasta with Cherry Tomatoes

Description

A fresh, vibrant pasta dish featuring sweet cherry tomatoes, creamy mozzarella, and aromatic basil – ready in just 20 minutes!


Ingredients

  • 12 oz pasta (penne or fusilli)
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, cubed
  • 1/3 cup fresh basil leaves, torn
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup Parmesan cheese (optional)

Instructions

  • Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining.
  • Heat olive oil in large skillet over medium heat. Sauté garlic for 30 seconds.
  • Add cherry tomatoes and cook 3-4 minutes until softened.
  • Add drained pasta to skillet and remove from heat.
  • Stir in mozzarella, basil, and balsamic vinegar. Add pasta water if needed.
  • Season with salt, pepper, and Parmesan. Serve immediately.

Notes

Use room temperature mozzarella for best melting. Don’t overcook the tomatoes – they should hold their shape while releasing their juices.
