A fresh, vibrant pasta dish featuring sweet cherry tomatoes, creamy mozzarella, and aromatic basil – ready in just 20 minutes!
Ingredients
- 12 oz pasta (penne or fusilli)
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella, cubed
- 1/3 cup fresh basil leaves, torn
- 3 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- 1/4 cup Parmesan cheese (optional)
Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining.
- Heat olive oil in large skillet over medium heat. Sauté garlic for 30 seconds.
- Add cherry tomatoes and cook 3-4 minutes until softened.
- Add drained pasta to skillet and remove from heat.
- Stir in mozzarella, basil, and balsamic vinegar. Add pasta water if needed.
- Season with salt, pepper, and Parmesan. Serve immediately.
Notes
Use room temperature mozzarella for best melting. Don’t overcook the tomatoes – they should hold their shape while releasing their juices.
